SOUS CHEF (GASTRO BAR)

Location: Cormey, Co. Cavan

Full-time, permanent

Essentials: Sous chef for busy Gastro bar, eclectic menu, unpredictable business levels up to 400 covers per day over weekends, circa 200 mid week, hot food served 12-9pm daily; team of 5 chefs in this area

Salary: €38k - €44k gross/year DOE

Main requirement: EU Passport or Irish Stamp 4

Job Responsibilities:

  • To lead kitchen team in chef's absence
  • To provide guidance to junior kitchen staff members, including, but not limited, to line cooking, food preparation, and dish plating
  • To oversees and organise kitchen stock and ingredients
  • To ensures a first-in, first-out food rotation system and verify all food products are properly dated and organised for quality assurance
  • To Keep cooking stations stocked, especially before and during prime operation hours
  • To train new kitchen employees to restaurant and kitchen standards
  • To Manage food and product ordering by keeping detailed records and minimise waste, plus work with existing systems to improve waste reduction
  • To supervise all food preparation and presentation to ensure quality and restaurant /banqueting standards

 

Requirements:

  • Minimum of 2 years’ experience as sous chef
  • Experience is fast paced gastro bar / bistro style setting
  • Good Organisational skills
  • Ability to lead as well as work with your team
  • Fluent written & spoken English
